Belgian Waffle Cookies

Now I know that this is not a recipe blog. . . but I have to share this one.  Our neighbor, Mary, was 100 years old when she passed away. Her mother and father came here from Belgium.  She made these cookies every year for all the neighbors.  I have made for my family and for students at school.

Cream: 1 cup butter (real butter), 1 1/2 c sugar, 1/2 tsp salt.

Add 4 beaten eggs. Mix well.

Add 1 Tablespoon flavoring: almond, or vanilla, or lemon. . . your choice

Stir in 2 c flour.  Mix really well. You should have a smooth dough.

Optional: coconut or chopped nuts

Drop on a hot waffle iron–small squares-_NOT a Belgian one–squares are too deep. ( Mary used the flat one that had to sit on a burner of the stove to heat up!)

Two minutes on each side or until golden brown.
